Goodonya Sister Sybil!! Collards and kale are the best!! We need to be eating them on a regular basis. When doing medical missionary work, instruction in the preparation of these two greens is high on my list. They are rich in Calcium also.
There are two ways that I have found to be very good (delicious!) First you can chop the greens very finely and put them in a salad. The salad dressing will make the dish.
Next and the way I prefer is to cook them till tender and put a cream sauce over the top! Of course the sauce will make the dish!
Care needs to be taken to not lose your minerals in the water. You can use the water for your sauce or be very careful as to how much water is used. You may steam them on the stove top or microwave them (this will require much less water). The greens need to be thoroughly cooked so they will be digestible and tender. They also need to be salted to taste. When they are cooked, then add chopped onion pre cooked. As much as you like. Then add the sauce and let simmer for awhile for the sauce to mingle with the greens.
Sauce:
One medium cooked yellow onion.
One medium cooked potato.
1/4 C raw rinsed cashews (poor folk may substitute 1/4 C toasted sunflower seeds)
Salt and season to taste.
Blend nuts or seeds until powder.
Add enough water to blend smooth nuts or seeds.
Add cooked onion and blend smooth.
Salt and season to taste.
Add potato and blend with enough water to consistency of gravy.
Fruit for breakfast and greens for dinner!! What a life!!
