Amen Mimi. We too are enjoying the fruit of our labour. And what a difference in taste to the store variety. This year I planted Mache, Arugula, Russian Kale, two different kinds of Romaine lettuce, Red Salad Bowl lettuce, a green Salad Bowl lettuce, Oak Leaf lettuce, Buttercrunch, spinach and two different kinds of Swiss Chard. The interesting thing and annoying is that something is attacking only my Fordhook Swiss Chard and I've lost all but one. They were planted in different places mixed in with other kinds of greens but only the Fordhook was targeted. Your salad sounds delicious. I love lemon on mine too. I also pick a wild green that tastes like lemon. I forget the name of it. It's a type of Sorrel. If you grow peas you can pick off some of the leaves and add to your salad also. It always amazes me how God brings forth such lovely food from tiny dry dead looking seeds.
